And I remember thinking how did he know to put the pursuit part in there? That maybe happiness is something that we can only pursue and maybe we can actually never have it. No matter what. How did he know that?"

You need to chase after happiness. Somehow happiness is just like a dream, you need to strive for it, the path is full of hardships, grieves and at some point you might lose everything you have (money, car, love one, career, etc.) but the result of the relentless chase/pursuit is the priceless HAPPINESS.
